Dry blend mixes last much longer without refrigeration than conventional ingredients. Because of the dehydration factor the dried components are usually considered shelf-stable. Although the exact shelf-life can vary based on the specific ingredients and storage conditions, as a rule of thumb, if stored in a cool, dry place away from direct sunlight many dry ingredient blends can last months after being opened. 

The beauty of dry ingredient blends is that they are simply dehydrated. The specific instructions will change depending on the intended use of a pre-mix, but the process is simple. By the addition of a hydrating factor, typically water or milk, the product re-hydrates. Simply add liquid and cook or use as directed. Other dry ingredient blends, such as seasonings, can be used without re-hydrating.
